Chef Fernando Rodriguez Tapia, Chef de Cuisine at Oak Room Abu Dhabi, began his culinary journey in Mexico City, where he worked as a cook and steward while pursuing his culinary arts degree. After graduating, he honed his skills at The Ritz Carlton Naples in Florida, before moving to Dubai for an internship at The Ritz Carlton JBR. In 2016, Tapia joined the pre-opening team of Cantina Kahlo at The Ritz Carlton Bahrain, where he spent two years before relocating to Abu Dhabi. There, he joined Oak Room as a Chef de Partie, quickly rising through the ranks to become Chef de Cuisine in 2022. A proud Mexican, Tapia brings his heritage to Oak Room by incorporating elements of traditional Mexican cuisine into his seasonal tasting menus, always focusing on high-quality, locally sourced ingredients. Known for his commitment to excellence, Fernando is also celebrated for his innovative approach to premium cuts, especially the Westholme Wagyu, which he describes as “the best Australian Wagyu I have ever tried”.

Featured in Michelin and Gault & Millau, Oak Room also earned Best Steakhouse at the What’s On Awards in Abu Dhabi.

At the heart of Oak Room’s menu is the Westholme Wagyu. Chef Fernando Rodriguez Tapia, who was first introduced to the brand back in 2019, says, “The flavor is remarkable; it’s the best Australian Wagyu I have ever tried.”
